Chile Relleno Casserole Recipe By Sherry

Sherry's Chile Relleno Casserole is a hearty, cozy dish that effortlessly brings traditional Southwestern flavor to your table.  This simple baked casserole has all the richness of traditional chile rellenos without the hassle of frying thanks to its mild green chiles, creamy Monterey Jack, and golden Cheddar topping.  It's a crowd-pleasing recipe that comes together quickly and bakes into cheesy perfection, making it ideal for weekend brunch, potlucks, and family dinners.

Chile Relleno Casserole

Serves: 8 servings

Prep Time: 15 minutes

Baking Time: 45 minutes

Ingredients:

  • 4 7-ounce cans whole, mild green chiles

  • 1 pound Monterey Jack cheese

  • 5 eggs

  • 1½ cups milk

  • ¼ cup flour

  • ½ teaspoon salt

  • dash of black pepper

  • 4 cups grated mild Cheddar cheese (1 pound)

Instructions:

  1. Slit chiles lengthwise on one side. Remove seeds and drain. 

  2. Slice Monterey Jack cheese into ¼ inch thick slices and place inside chiles. 

  3. Place stuffed chiles in an ungreased 3 quart baking dish. 

  4. Mix eggs, milk, flour, salt and pepper well, and pour over chiles. 

  5. Sprinkle top with grated Cheddar. 

  6. Bake uncovered at 350 degrees for 45 minutes.
